Golden ale brewed with Maris Otter and ale malt, hopped with Challenger and East Kent Goldings. Lightly bitter, balanced with the golden malt profile, and a dry finish.

Soft and drinkable dark mild. A rounded and nutty blend of dark malts, subtle fruit and a hint of spice from our house yeast, balanced by delicate earthy Saaz and Goldings hops.

A light, hoppy, easy drinking farmhouse pale, brewed in collaboration with our friends at Little Earth Project. A simple base of Golden Promise malt and torrified Wheat, boiled with fresh First Gold hops. Fermented with Jovaru farmhouse yeast.

Amber Belgian IPA, with malty marmalade sweetness and old school bitterness. Brewed with Belgian pilsner malt, traditional Belgian yeast and a hefty amount of Amarillo, Centennial and Cascade

Copper Gose-style sour with coriander and heaps of fresh lime, fermented with wild-captured Welsh yeast. The citrus zest is balanced by a subtle, savoury hint of salt. Crisp and refreshing, vibrant and limey.

A one-off blend of farmhouse pale ale and a small portion of spontaneously fermented wild ale. Earthy notes of sun-baked hay and barnyard funk alongside a bright splash of orchard fruit. Sharp, vibrant acidity with a refreshing but complex finish.

Tempranillo barrel aged pale ale brewed with premium Pilsner malts, and noble hops. Aged for over two years with a mixed culture before resting on whole, and pureed apricots.

Raw Ale, produced with our friends from Beermoth in Manchester in November 2023. An unboiled wort made with Pilsner, Wheat and Oat malt, fermented in Oak Bordeaux barrels with Lithuanian farmhouse yeast and the Wilderness mixed culture. Lightly dry hopped with Motueka for a fresh zing.

Dark ale brewed with a blend of Golden Promise, cara, chocolate, Munich and roasted malts, and hopped with First Gold, Challenger and Fuggles. Cellared in bottle for 8 months.

A strong farmhouse amber ale, brewed with vienna and heritage pilsner malt. Hopped with Goldings and Brewers Gold, fermented with our favourite Belgian yeast. This beer is super tasty fresh, but is also perfect for ageing.

A collaboration with our friends from Balance. A blend of two versions of the same turbid-mashed base beer, fermented in barrel with our respective house cultures. Two parts of Rioja barrel aged ale with second use Shropshire plums to one part from one of our favourite sour-producing Bordeaux barrels.

Oak-aged pale ale brewed with aromatic Belgian malts and aged hops, matured in Rioja barrels for two years with a wild mixed culture. Complex and deeply funky, with a gentle, rounded tartness.

This beer is a product of the land, and the people who made it. A tart and funky blend to celebrate the first five years of Wilderness. Two parts spontaneously fermented pale ale (inoculated using our orchard coolship) to one part Bordeaux barrel aged saison. Drink now, or age for another five years.
